An Alexander Clark's will was probated in 1865-1869 at Canning Parish... chance it's the same one. "That" Alexander died 13 Feb 1865. Had moved, apparently, from Canning to St John.
IF this Alexander is proven to have been born @1790, then, he may be the one aged 70, 1861 Census of Wickam, Queens County, wife Elizabeth, aged 78. He's listed as a Miller and Farmhouse Owner.
Children: John - 30 - Mariner, h/w Mary -31, Eunice - 24, Charles - 40, h/w Deborah - 25, w/ granddaughters Elizabeth - 3, and Martha - 3.
Same Alexander Clark(e) shows up as 59, in 1851 Census for Wickam Parish, but shows wife, Elizabeth as 58, so more likely than the 10 years difference in 1861 Census. Another son, William, aged 31 appears, as well John shows as 23, Charles as 28, Eliza as 20, Margaret - 17 and Eunice/Unis as 15.
Now, not to be outdone, we have another DIFFERENT Alexander, who could ALSO be a possibility. He appears in 1861 Census for Canning, aged 62 (with bapt. of 1802, quite possible), wife "Nansy" is 47, children are Elizabeth - 27, Archibald - 14 and James - 8.

[1308] In "Early Baptists of Queens County, New Brunswick", by Walter Greenwood, it would seem he's listed as the father of a William Henry Clark, and had siblings named Phoebe and Matilda. Waiting on some more information, before setting those in database. Some dates don't seem to jive, unless more than one William Henry Clark in that timeframe.

1901 Census shows b.d. as 20-Dec-1863. Date of death taken from notebook of Alice Dares of Acadia University Library at Wolfville. CV1 date is also 20-Dec-1863. However, have seen as 20-Oct-1863, as well. PERHAPS, another b.d vs bapt. date?
